2 tablespoons unsalted butter
1 small onion, chopped fine
1 stalk celery, chopped fine
1 small carrot, chooped fine
2 cloves garlic, sliced thin
1 pound lean ground beef
1 pound lean ground pork
2 large eggs, lightly beaten
1 cup bread crumbs, ground
fine
1/2 cup grated Romano cheese
2 tablespoons Worcestershire
sauce
1/4 cup ketchup
2 tablespoons hopped fresh basil
1 teaspoon chopped fresh thyme
1/2 teaspoon dried oregano
1 teaspoon Kosher salt
black pepper to taste
2 large hard boiled eggs, shells
removed
8 slices bacon or prosciutto

Pre heat the oven to 350 degrees.

Melt the butter in a large saute pan over medium high heat. Add the onion celery, and carrots and cook until soft, about 6-8 minutes.

Add the garlic and continue until the garlic is toasted. Remove from the heat ad allow to cool slightly.

In a large mixing bowl, combine the beef, pork, beaten eggs, bread crumbs, cheese, Worcestershire, ketchup, basil, thyme, oregano, salt and pepper. Mix well.

Add the cooled vegetables to the mixing bowl and mix. Do not over work the meat, or it could become tough.

Shape half of the mixture into a loaf, and place it in a baking dish.

Insert the hard boiled eggs into the oval, then cover the eggs with the other half of the mixture.

Cove the top of the loaf with the bacon or prosciutto slices.

Place the dish in the oven and bake for 1 1/4 – 1/1/2 hours (the meatloaf can be covered with foil for a more tender exterior).

Remove from the oven and let rest for 8-10 minutes before sliceing and serving.

I.’ve watched your show many times when Im awake before 12 and I thought about making the meatloaf but I need some help on where to find 2 tablespoons hopped fresh basil. Ok just bustin *alls But im saddened to find out there is no Restaurant.Have you thought about Schenectady?
